Couple Uses Wedding Fund to Save Hurt Goldendoodle

What better way to start a marriage than by saving a dog together? Forget the big weddingā€”Dylan McCay and Emily Roberts found something even more meaningful when they found a Goldendoodle abandoned on the side of an Arkansas road.

The soon-to-be newlyweds drove 20 minutes to Acklinā€™s location after seeing a Facebook post about an injured dog. She had unfortunately been injured in a hit-and-run.

Dylan and Emily gave up their wedding fund to pay for Acklinā€™s reconstructive surgery. It sounds like it was an easy decision.

ā€œ[We] decided in that moment that I would do whatever was necessary to help this puppy. She deserved a chance at life,ā€ they wrote on Facebook.

Acklinā€™s extensive leg reconstructive surgery totaled between $10,000 and $15,000, which Dylan and Emily paid using every dollar they could gather. They dipped into their wedding fund, and life savings, and even created a GoFundMe to help cover Acklinā€™s rehabilitation care.

The couple shared that theyā€™re ā€œjoyous and excited at the possibility of saving this wonderful girl and giving her the best life she could imagine.ā€

Turkey-Cranberry Meatballs Recipe

Our pups are going to find out one way or another to snag some Thanksgiving food ā€“ whether itā€™s swiping a plate when a guest isnā€™t looking or cleaning up the crumbs on the floor. So why not make them feel included with a special recipe just for them? This isnā€™t just another biscuit or treatā€”this is the good stuff: turkey-cranberry meatballs. Theyā€™re going to love it (and you might, too!).

Youā€™ll need:

  • 1 lb. ground turkey (85% lean)

  • 1/2 cup panko breadcrumbs

  • 1 large egg

  • 1/4 cup unsweetened dried cranberries

Directions:

  • Preheat the broiler to high and line a baking sheet with parchment paper. In a large bowl, combine the ground turkey, breadcrumbs, and egg.

  • Add cranberries, mixing until combined.

  • Using a cookie scoop or your hands, shape the mixture into 1 Ā½-inch balls. Arrange meatballs 2 inches apart on a prepared baking sheet.

  • Broil for 8 to 10 minutes or until cooked through.

  • Let the meatballs cool before serving. Store meatballs in an air-tight container in the fridge for 3-4 days. Extra meatballs can also be frozen: freeze until solid (about 1 hour), and then transfer to a freezer-safe container and store for up to 1 month.
